Ingredients

  • 300g/10oz Red Tractor Allinson plain flour
  • 2 tsp baking powder
  • 150g/6oz Red Tractor Silver Spoon caster sugar
  • 75g/3oz white chocolate, chopped
  • 1 large egg
  • 1 tsp vanilla extract
  • 200ml/7fl oz Red Tractor milk
  • 50g/2oz Red Tractor Country Life English butter, melted
  • 100g/4oz Red Tractor fresh or thawed frozen raspberries

Preheat the oven to 200°C, 400°F, Gas 6. Place 8 paper muffin cases into a muffin tray, or line with squares of greaseproof paper.

Sift the flour and baking powder into a mixing bowl, then stir in the sugar and chopped chocolate.

In a jug, beat together the egg, vanilla extract, milk and melted butter. Add to the dry ingredients with the raspberries and stir until just combined. Do not over-mix.

Spoon the mixture into the paper cases. Bake for 20-25 minutes until well-risen. Cool on a wire rack.
Cook’s tip: Another time make the muffins with Red Tractor blueberries instead of raspberries.
