No time to cook? You’ll have this very healthy, inexpensive mid-week meal made in no time using Red Tractor turkey stir-fry strips and lots of Red Tractor fresh vegetables.
Serves 4

- Finely grated rind and juice of 1 small orange
- 2 tbsp soy sauce
- 2 tbsp sweet chilli sauce
- 2 tsp cornflour
- 2 tbsp vegetable oil
- 450g/1lb Red Tractor turkey stir-fry strips
- 1 large Red Tractor carrot, sliced into fine strips
- 1 Red Tractor red onion, thinly sliced
- 1 Red Tractor courgette, sliced into fine strips
- 110g/4oz Red Tractor broccoli, broken into small florets
- 110g/4oz Red Tractor mushrooms, sliced
- 110g/4oz Red Tractor curly kale or cabbage, shredded
- Salt and freshly ground black pepper

In a bowl, mix together the orange rind and juice, soy sauce, sweet chilli sauce and cornflour. Set aside.

Heat the oil in a wok or large frying pan and add the turkey strips, stir-frying them over a high heat for 2 minutes. Add all the vegetables and continue stir-frying for another 3-4 minutes, or until the vegetables are cooked, yet still crunchy.

Add the packs of noodles to the stir-fry and cook for a few moments. Stir the orange juice mixture, add to the stir-fry and cook for another few seconds until slightly thickened. Season with a little salt and pepper, then serve.
Cook’s tip: If you can’t find turkey stir-fry strips, use Red Tractor turkey steaks and slice them yourself. Another time, use Red Tractor pork fillet or chicken breasts, thinly sliced into stir-fry strips. To make the meal more filling, serve with 2 x 150g packs ready-to wok noodles.
