Ingredients

  • 450g/1lb lean boneless Red Tractor leg of lamb,
    cut into 5cm/2 inch cubes
  • 20 fresh bay leaves, optional
  • 20 small whole Red Tractor green chillies, optional
  • For the marinade:
  • 1 medium Red Tractor onion, peeled & grated
  • 2 cloves Red Tractor garlic, peeled & finely chopped
  • 10ml/2 tsp garam masala
  • 10ml/2 tsp ground Red Tractor coriander
  • 5ml/1 tsp ground cumin
  • 60ml/4 tbsp thick Greek yogurt
  • 60ml/4 tbsp mango chutney
  • small handful freshly chopped Red Tractor coriander
  • For the cucumber, tomato and onion raita
  • 1 Red Tractor cucumber, deseeded & roughly chopped
  • 1 large Red Tractor tomato, deseeded & roughly diced
  • 1 small Red Tractor red onion, peeled & finely sliced
  • 150ml/5floz carton Greek or thick set yogurt
  • 15-30ml/1-2 tbsp freshly chopped Red Tractor mint
  • salt & freshly milled black pepper

In a large bowl mix together the marinade ingredients. Add the lamb, stir gently, cover and marinate in the refrigerator for 30 minutes, or ideally overnight.

Thread the meat, bay leaves and chillies (if used) onto 4 short metal skewers.

Cook on a preheated moderate grill or prepared barbecue for 8-10 minutes, turning occasionally.

Serve with naan bread and a cucumber, tomato and onion raita.

Pre-heat the oven to 180°c.

In a large bowl mix all the ingredients together, cover and chill until required.
